Sauté bell peppers, onions and celery and Cajun seasoning. When soft add 1-2 tsp minced garlic. Next add two cans diced tomatoes with juices and 4 cups chicken stock and bring to a boil. Then add 2 cups uncooked rice and chicken to pot and cover for 20-30 min until rice is soft and liquid is absorbed.
